Paris-Brest by the one and only Jacques Genin!  Add it to the list of absurd pleasures that can be had in his shop.  The Paris-Brest was created in honor of a bicycle race between Paris and Brest in 1891. It resembles a bagel sandwich in form and shape, but the comparison ends there.  The filling is an exquisite hazelnut praline cream, and the chou pastry (also used in eclairs and profiteroles) is super fresh, it’s exterior speckled with coarsely chopped roasted hazelnuts.  Overall, it lived up to the hype and exceeded our expectations.  Living a block away from this place is quickly becoming a problem for our waistlines…
